The Secret to Perfect Wimbi Porridge
Finger millet porridge (wimbi/uji) is one of Kenya's most beloved breakfast foods — and for good reason. It's incredibly nutritious, naturally rich in iron and calcium, and has a uniquely satisfying taste that nothing else can match.

What You'll Need
- 1 cup Ayola Finger Millet & Amaranth Blend
- 3 cups water
- 1 cup milk (dairy or plant-based)
- Honey or sugar to taste
- Pinch of salt
Step-by-Step Method
Step 1: The Cold Water Mix This is the most important step. Mix your porridge flour with 1 cup of COLD water in a bowl. Stir until completely smooth with no lumps. This is the secret — never add flour directly to hot water.
Step 2: Boil the Remaining Water Bring 2 cups of water to a rolling boil in a medium saucepan.
Step 3: The Slow Pour Reduce heat to medium. Slowly pour your flour mixture into the boiling water while stirring continuously with a wooden spoon. Keep stirring!
Step 4: Cook and Stir Continue stirring over medium heat for 8-10 minutes until the porridge thickens to your desired consistency. Add milk gradually while stirring.
Step 5: Season and Serve Add a pinch of salt and sweeten with honey to taste. Serve hot.
